The Optimist brings the Hamptons to the South. Super fresh, super American seafood from the Louisiana gulf to the Northeastern coast, prepared classically. The open kitchen is centered with 10 feet of wood burning hearth grills and ovens which will prepare our food with “back of the boat” love. A coastal feel without being “theme-y.” This is the ownerships design statement for this restaurant. The Optimist in Nashville site is an abandoned Hammer Mill – where Hammer handles were manufactured. The building had all of the challenges of not only an old building, but one that required many infrastructure and code upgrades. There were three venues built in approximately 15,000 sf. PSBs role on this project was to hire the design teams and provide design management for the ownership. This project is a visual delight.
